Fresh figs for garnish
Chop the mixed nuts and put in a jar.
Chop the dried fruit and mix with the dried berries and lingonberries and put in a jar.
Toast the nuts in a dry frying pan and set aside.
Place the brie in a frying pan and top with fruit, nuts and berries.
Place the pan over the fire, cover with a lid or plate and leave until the cheese is hot and soft.
Top with the thyme and honey.
Cut a slit across the cheese and open up a hole.
Dip with good bread and enjoy!
