COOKING TIME: 30-40 minutes
Cook the rice, coconut milk, water, banana and sugar in a rice cooker (or a regular saucepan).
Leave until all the water has been absorbed by the rice.
Stir in peanut butter, cocoa nibs and maple syrup.
Pour the batter into a ziplock bag and flatten.
Place in the fridge, preferably overnight.
Cut to desired size and wrap in sandwich paper or waxed wraps.
