Rice cake with coconut, banana and cocoa nibs

A delicious and energising rice cake for a bike ride.

INGREDIENTS

COOKING TIME: 30-40 minutes

  • 250 g Risotto rice
  • 400 ml Coconut milk
  • 100 ml Water
  • 1 tbsp Icing sugar
  • 1 Banana
  • 2.5 tbsp Peanut butter
  • 50 g Cocoa nibs
  • To taste Maple syrup

PREPERATION AT HOME

Step 1

Cook the rice, coconut milk, water, banana and sugar in a rice cooker (or a regular saucepan).

Step 2

Leave until all the water has been absorbed by the rice.

Step 3

Stir in peanut butter, cocoa nibs and maple syrup.

Step 4

Pour the batter into a ziplock bag and flatten.

Step 5

Place in the fridge, preferably overnight.

Step 6

Cut to desired size and wrap in sandwich paper or waxed wraps.
