Peel and chop the cucumber into small cubes.
Finely chop the peppers, onions and leeks. Place in a bowl with the mustard seeds.
Add the sugar, salt, vinegar, and dill to the water and bring to the boil.
Add the cucumber mixture and simmer for 10 minutes. The mixture should be thick.
Pour the desired amount into a suitable, portable container.
The remainder will keep in the fridge for several months if you pour it into a cleaned glass jar.
Grill the sausages.
Warm up the hot dog rolls.
Put the sausages in the rolls with the gherkin relish, mustard, ketchup, mayonnaise and roasted onions.
Garnish with finely chopped red onion and parsley.
Serve with sauerkraut.
