Soy mince wraps

Nothing beats the sensation of being outside and eating with your hands! Not only is this a very tasty wrap – it’s also super simple and produces almost no dirty dishes. Try to look for a ready-made mix of frozen peas, corn, and diced bell peppers. You should also be able to find dried and seasoned soy mince in most supermarket’s taco shelves. Small details that make your preparations easier!

  • 150 ml Green peas
  • 150 ml Corn
  • 150 ml Diced bell peppers
  • 0.5 Squash
  • 100 ml Dried soya mince
  • 1 Garlic clove
  • 1 tbsp Lime juice
  • 0.5 tbsp Ground cumin
  • 0.5 tbsp Paprika
  • 0.5 tsp Chili flakes
  • To taste Salt
  • Olive oil
  • Corn chips
  • Corn tortillas

PREPERATION AT HOME

Step 1

Leave peas, corn and bell pepper to thaw in a strainer.

Step 2

Roughly grate the squash and finely chop the garlic.

Step 3

Place everything on a tray lined with baking parchment and pour the lime juice on top.

Step 4

Dry in the oven at 50 degrees for 6-10 hours.

Step 5

When dry, combine the dry ingredients with the spices and put in a zip-lock bag.

COOKING OUTSIDE

Step 1

Bring some water to boil together with the dried vegetables and the soy mince.

Step 2

Let simmer under a lid for 5 minutes. Add more water if needed.

Step 3

When you are happy with the texture you can drizzle some olive oil for some extra energy.

Step 4

Fill your tortillas and serve with corn chips.
