Winter Squash on Toast

This warm and delicious toast can be a simple breakfast, snack or light meal! The rich cheese and toast set the foundation to the nourishing winter squash while honey sweetens it up just a touch.

INGREDIENTS

  • 1 Butternut
  • 4 tbsp Burrata cheese
  • 2 Slice Sourdough bread
  • 2 Sprig Thyme
  • 0.5 tsp Chili flakes
  • 1 tsp Honey
  • 2.5 dl Arugula
  • 3 tbsp Olive oil
  • To taste Salt & pepper

PREPERATION AT HOME

Step 1

Pre-heat oven to 375.

Step 2

Toss squash with 1 Tbsp. olive oil, thyme, honey and chili flake. Season with Kosher salt and black pepper.

Step 3

Place on baking tray and roast in oven for 15 minutes or until fork tender. Remove and cool.

COOKING OUTSIDE

Step 1

Bring griddle plate to medium heat.

Step 2

Brush 1 Tbsp. olive oil on both sides of sliced bread. Place on griddle plate and toast until golden brown on all sides.

Step 3

Place toast on a plate and spread ricotta or burrata evenly over each piece.

Step 4

Reheat squash in small pan.

Step 5

Combine squash and kale in a mixing bowl along with remaining 1 Tbsp. olive oil and toss to combine well.

Step 6

Arrange squash and kale over the top of the bread.
